Nuts seeds bar or Mixed Panjeeri is a wonderful way to stock up on your micro-nutrients and keep up the energy level. This recipe uses less oil and very less sugar. In 4.5 cups of mixed nuts and seeds, we have used only 4 spoon of ghee (clarified butter).
In addition, We have used just one cup of sugar to make these bars. This amount of sugar is helpful in binding all the ingredients together. Reduce the sugar further only if you are okay with a crumbly nuts seeds bar. This recipe is just sweetened, you may wish to add more sugar to your taste.
We have included Desiccated coconut (Khopra) and Edible Gum (Gond). In nuts, we have Fox nuts (Makhana), Almonds (Badaam), Cashews (Kaaju), Pistachios (Pista) and Walnuts (Akhrot). In seeds, we have Melon Seeds and Poppy Seeds or Khas Khas or Posat dana. You may use any variety of seeds that you like or even add a mix of it.
The edible gum needs to be fried so that it swells properly. All other nuts and seeds are roasted in the leftover ghee. So if you are omitting the edible gum, you may cut down the ghee/ oil to a great extent.
Keep the sequence of roasting in mind, it is based on the color. We have roasted seeds/ nuts with white color first, then mixed color (like pistachios and coconut and darkest color (almonds) at the last. If you roast almonds at the starting, it would leave its color in the oil and discolor the other nuts/ seeds.

Mixed Panjeeri
Equipment
- Thick Bottomed Pan
- Mixer Grinder

Ingredients
- 1 Cup Desiccated coconut (Khopra)
- 1 Cup Fox nuts (Makhana)
- ½ Cup Almonds (Badaam) Sliced
- ½ Cup Cashews (Kaaju) Broken
- ½ Cup Edible Gum or Gond
- ½ Cup Melon Seeds You may use any variety of seeds
- ⅛ Cup Pistachios Pista
- ¼ Cup Walnuts Chopped
- ⅛ Cup Poppy Seeds or Khas Khas or Posat dana
- 1 Cup Sugar
- ½ Cup Water
- 4 Tbsp Clarified Butter (Ghee) use any neutral tasting oil to make it vegan
Instructions
- Heat ghee and fry edible gum (Gond). It will puff up well and can be pressed to a powder between fingers. Take out and keep aside. Pound lightly when cool.½ Cup Edible Gum or Gond, 4 Tbsp Clarified Butter (Ghee)
- In the same pan, roast fox nuts. Keep them aside and pound lightly when cool.1 Cup Fox nuts (Makhana)
- Roast Cashews and keep aside½ Cup Cashews (Kaaju)
- Roast seeds and keep aside½ Cup Melon Seeds
- Roast poppy seeds (khus khus).⅛ Cup Poppy Seeds or Khas Khas or Posat dana
- Add in pistachios, walnut, coconut in the poppy seeds and roast lightly. Take them out1 Cup Desiccated coconut (Khopra), ⅛ Cup Pistachios, ¼ Cup Walnuts
- Roast almonds and keep them aside½ Cup Almonds (Badaam)
- In the same pan, add sugar and water. Boil to one string consistency (Around 5 mins)1 Cup Sugar, ½ Cup Water
- Add in all the roasted seeds and nuts and mix well.
- Quickly transfer it to a greased tray or plate and let it set
- Cut and enjoy this healthy goodiness
Notes
- Note that we are roasting seeds/ nuts with white color first, then mixed color (like pistachios and coconut and darkest color (almonds) at the last. Keep this sequence in mind.
- If you roast almonds at the starting, it would leave its color in the oil and discolor the other nuts/ seeds.
- Vegan: Replace ghee with any neutral tasting oil.
